Ingredients

  • 6 oz grass-fed steak (sirloin or strip), room temperature
  • 4 oz roasted sweet potato cubes
  • 1 cup broccoli florets, steamed or roasted
  • 2 tbsp chimichurri (on the side)
  • 1 tsp olive oil
  • Salt and black pepper

Instructions

  1. Toss sweet potato with oil, salt, and pepper; roast at 425°F until caramelized.
  2. Season steak generously. Sear in a hot skillet to desired doneness; rest before slicing.
  3. Cook broccoli until bright green and tender-crisp.
  4. Layer sweet potato and broccoli, add sliced steak, and serve chimichurri on the side.
