Ingredients
- 6 oz grass-fed steak (sirloin or strip), room temperature
- 4 oz roasted sweet potato cubes
- 1 cup broccoli florets, steamed or roasted
- 2 tbsp chimichurri (on the side)
- 1 tsp olive oil
- Salt and black pepper
Instructions
- Toss sweet potato with oil, salt, and pepper; roast at 425°F until caramelized.
- Season steak generously. Sear in a hot skillet to desired doneness; rest before slicing.
- Cook broccoli until bright green and tender-crisp.
- Layer sweet potato and broccoli, add sliced steak, and serve chimichurri on the side.
