Ingredients
- 6 oz baked falafel, warmed
- 4 oz cooked brown rice
- ½ cup chickpeas, drained and rinsed
- ½ cup cucumber, diced
- ½ cup tomato, diced
- 2 tbsp red onion, minced
- 2 tbsp lemon-tahini dressing (on the side)
- Fresh parsley
Instructions
- Bake or air-fry falafel until crisp outside and hot inside.
- Warm rice; combine chickpeas, cucumber, tomato, and onion.
- Layer rice, vegetables, and falafel; add parsley.
- Serve dressing on the side to control calories and keep crunch.
