Ingredients

  • 6 oz baked falafel, warmed
  • 4 oz cooked brown rice
  • ½ cup chickpeas, drained and rinsed
  • ½ cup cucumber, diced
  • ½ cup tomato, diced
  • 2 tbsp red onion, minced
  • 2 tbsp lemon-tahini dressing (on the side)
  • Fresh parsley

Instructions

  1. Bake or air-fry falafel until crisp outside and hot inside.
  2. Warm rice; combine chickpeas, cucumber, tomato, and onion.
  3. Layer rice, vegetables, and falafel; add parsley.
  4. Serve dressing on the side to control calories and keep crunch.
